VARIETY: Roditis of the mountainous Aigion.
   
CULTIVATION AREA: The vineyards of the slopes of the entire Aigion region and mostly those at an altitude over 800 m. The vineyards yields do not exceed 1000 kilos per 1000 square meters. Main vineyards: Ziria, Fteri, Trapeza, Kalamias.
   
HARVEST – VINIFICATION: Roditis harvest starts at mid-September and lasts till the end of October. Temperatures at the high regions reach already 5-10°C. The maturation process and the meteorological conditions are systematically monitored. The grapes are collected in crates and come to the winery on the same day. After a light pressing procedure, we follow the essential principles of modern white vinification in stainless steel tanks at low temperatures, while a part of them undergo cold extraction.
ORGANOLEPTIC FEATURES:             Green-yellow color. Bouquet of fresh and exotic fruits with pleasant notes of citrus fruits on a background of mineral notes, typical of the quality wines of this region. Fine acidity and freshness that balances the rich body of Roditis. Pleasant and interesting mouth-feel that leads to an aromatic aftertaste with rich and tasteful aroma.
               
FOOD AND WINE PAIRING:            

Pluripotent tasteful wine with known and valued taste in the Greek cuisine. It goes with grilled gilthead, fish, seafood, white meat with white sauces, light snacks. It accompanies oil-cooked dishes and feta cheese. It goes well with fruits. Served at 10°C-12°C.
