IANOS Cabernet Sauvignon

 
             
VARIETY: Cabernet Sauvignon.
   
CULTIVATION AREA: Selected vineyards of the mountainous Aigion region (Arachova, 750 meters of altitude).
   
HARVEST – VINIFICATION: The grapes are harvested during the first ten days of October, after systematic monitoring of their maturation course. They are collected in crates and come to the winery on the same day. After a light crushing and de-stemming, the grapes are carried to the vinification tanks. After the alcoholic and the malolactic fermentations are over, the wine ages in barrels for 12 months. In-between, the barrels are decanted and are under continuous and analytical monitoring of the taste, which leads to certain choices. Afterwards it is lightly filtered and bottled..
                 
ORGANOLEPTIC FEATURES:               IANOS – Cabernet Suavignon is a red ageing wine. Its strong and deep violet colour with deep red notes impresses at first sight. The typical Cabernet aromas are present in the nose, with green and red pepper in a background of spices, caramel, chocolate, but also marmalade and berries. Rich in the mouth with exceptionally robust tannins, but also rounded and pleasant. Long and aromatic aftertaste.
                 
FOOD AND WINE PAIRING:              

It can accompany and show off rich plates with strong character, like red meat with strong sauces, game, yellow cheeses, pasta with rich red and chilly sauces. Served at 18°C-19°C. It ameliorates with bottle-ageing for 7-8 years from its harvest, as long as it is kept in proper temperature conditions.
