We always chose the best barrels of the underground cellar of OENOFOROS. The main variety is the Cabernet Sauvignon, combined with the rest red varieties of mountainous Aigion region, varying according to the year. |

The mountainous regions of the slopes of Aigion at an altitude of 600-850 m |

|
HARVEST – VINIFICATION: |
When they are harvested, the grapes are carried to the vinification tanks, after a light crushing and de-stemming. When the alcoholic and malolactic fermentations are over, the wine ages in barrels for 12 months. Afterwards, it is lightly filtered and bottled. The wine stays at the winery and ages in bottles for at least 2 more years. |

ORGANOLEPTIC FEATURES: |

|
The choice of our best barrels has given us an excellent result. A wine with long-ageing potential with a strong bouquet. The aromatic character of Cabernet Sauvignon is finely shaping with the ageing aromas in the new oak barrel. Its strong tannins give a fixed structure, so that it withstands the long ageing, while the ‘sweet’ tannins of the rest varieties give depth and volume.

Taste it now with dishes of very strong but fine character or keep it in your cava for many years in order to maximize your pleasure. For example, try it with wild boar, liver with wild mushrooms, sauces with strong spices.
