The Chardonnay of selected vineyard in the mountainous Aigion at an altitude of 600 to 850 meters (vineyards of Paraskevi and Fteri). |

HARVEST – VINIFICATION: |
The grapes are harvested during the third ten days of August, after systematic monitoring of their maturation course. They are collected in crates and come to the winery on the same day. They are carried to the press, where the must is separated, yielding almost 60%. Then, there is an intense static racking, inoculation and fermentation at 19°C ± 1°C in oak barrels. After the alcoholic and the malolactic fermentations are over, the wine ages in the barrels together with the lees, undergoing continuous weekly stirring and monitoring, until it gains complete clarification and taste evolution. Afterwards it is lightly filtered and bottled.. |

ORGANOLEPTIC FEATURES: |

Its careful and detailed vinification gives it a rich and complex aroma in continuous evolution. Fruity aromas of the grapes and the fermentation in contact with the barrel (the mango and grapefruit aromas stand out in a background of chestnut, bread crust and truffle). Rich body, strong acidity and a woody taste that proves the ageing potential and satisfies all the senses of the mouth. |

FOOD AND WINE PAIRING: |

It ideally accompanies rich white dishes with mushrooms (fresh Dirfis mushrooms) and smoked cheese, grilled dentex), as well as strong cheeses.
Ageing: IANOS Chardonnay ameliorates with bottle-ageing for 4-5 years from the year of harvest, as long as it is kept in steady temperature conditions. Served at 12°C – 14°C. It improves in taste and aroma if we decant or open the bottle half an hour before we serve it.
