HARVEST – VINIFICATION: |
The grapes are harvested during the last ten days of September, after systematic monitoring of their maturation course. They are collected in crates and come to the winery on the same day. They are immediately de-stemmed and remain in a low temperature tank for 48 hours. Afterwards, we follow every essential principle of modern ‘red’ vinification. After the malolactic fermentation is over the wine matures in oak barrels in the underground cellar for 8 to 10 months. |

ORGANOLEPTIC FEATURES: |

|
The vinification and aging process has given us a strong aromatic Syrah (with dominating aromas those of red blossoms, black pepper, vanilla and spices). Its rich body and velvety sense of tannins promise our pleasure and its longevity. |

FOOD AND WINE PAIRING: |
|
|
|
|
|
Serve at 16 °C -18°C with respectively strong dishes (strong cheeses, meats with vivid sauces, feathered game etc.).
