HARVEST – VINIFICATION: |
The grapes are harvested during the second ten days of September, after systematic monitoring of their maturation course. They are collected in crates and come to the winery on the same day. They remain in the fridge for 24 hours and then they are de-stemmed and stay in a stainless steel tank at low temperatures for 12-18 hours (contact of the skins with the must before fermentation). After that, they are carried to the press, where the must is separated, yielding almost 60%. Then, there is an intense static racking, inoculation and fermentation at 15±1οC. When the alcoholic fermentation and the first racking are over the wine is clarified, lightly filtered and bottled.. |
